Dave’s Killer Burgers and Sautéed Mushrooms

Dechant Spice

It’s that time again! Yup…Burger Time!

You can buy some frozen patties and throw them on the grill OR you can feed your family and friends something a little more special. Why settle for ordinary when you can create something that everyone will rave about. It’s really not that hard. All it takes is a little bit of prep time. This recipe took me about fifteen minutes to prepare and 20 minutes to cook. Believe me, it’s well worth the effort!

Ingredients – Burgers

  • One pound of lean ground beef
  • Half an onion
  • 5 strips of uncooked bacon
  • 1 cup of shredded cheddar
  • 1 small jalapeño pepper
  • 2 eggs
  • And of course…3 tbsp of Dechant Spice

Ingredients – Sautéed Mushrooms

  • 6 large mushrooms
  • 1 tbsp oil
  • 1/2 cup butter
  • 1 tbsp Dechant Spice

Preparation – Burgers

  1. Dice the onion fine.
  2. Slice open the jalapeño, remove the seeds and dice fine.
  3. Dice the bacon.
  4. In a large mixing bowl, combine the ground beef, onion, jalapeño, cheese, bacon and Dechant Spice.
  5. Crack eggs into the bowl.
  6. Mix it all up and form into patties.

    Mix up all the ingredients and of course don’t forget the Dechant Spice!

Grilling

  1. Preheat grill to 400 F and spray with oil.
  2. Throw the patties on and start cooking. Size and thickness of the pattie will determine the cooking time. These took me about 10 minutes per side.
  3. While the patties are grilling, you can prepare the toppings…lettuce, tomato, pickles, avocado OR your favourite topping.
  4. How about trying some of my sautéed mushrooms

Sautéed Mushrooms

  1. Slice six large mushrooms.
  2. Heat frying pan on high and add 1 tablespoon of oil and 1/2 cup of butter.
  3. Add mushrooms and reduce heat to medium high.
  4. Add 1 tablespoon of Dechant Spice.
  5. Salute mushrooms until they start to soften and remove from heat. This will take less than 5 minutes.

Mouth Watering Roast Recipe

Dechant Spice seasoned medium rare roast

This is how you season and cook a mouth watering roast!

Ingredients

  • Start with your favourite roast…prime rib, rib eye, sirloin tip, or whatever you prefer.

Directions

1. Place the roast in a baking pan and shake Dechant Spice liberally all over it.

2. Rub it in good.

3. Turn the roast and make sure to get all sides fully covered with Dechant Spice.

4. Cover and place in the fridge for a minimum of five days…this gives the seasoning time to work.

5. Time to cook!  You can do this in the OVEN or on the BBQ.

OVEN:

1. Preheat oven to 300 – 350 F.

2. Add a little water to the roasting pan and place in the centre of the oven.

3. Let cook till internal temperature is 140 F. This is medium rare. For a 3lb roast this will take approx 2hrs.

4. When roast is to temperature, take out of the oven and let sit for at least 20 minutes before cutting. This will allow the meat to set up and finish cooking to a perfect medium rare.

THE BBQ:

There are two different ways I like to cook a roast on the BBQ.  On a  PAN or on the ROTISSERIE.

ON A PAN: (I like to use a steel cookie sheet for this)

1. Line cookie sheet with foil and spray with cooking spray.

2. Preheat BBQ to 250 to 300 F and keep the BBQ at 250 to 300 F throughout cooking. (This can be tricky especially with a breeze).

3. Place the roast on the pan.

4. Cook until internal temperature is at 140 F. This is medium rare.

5. Remove from the BBQ and let stand for at least 20 minutes before cutting. This allows the meat to set up and finish cooking to a perfect medium rare.

ON THE ROTISSERIE:

1. Slide the spit through the centre of the roast. Try to balance the roast as best as possible on the spit. This can be tricky but the better it’s balanced, the easier it turns. I like to place a drip tray under the roast to catch the drippings above the flames. Saves having to explain to the fire fighters that your just BBQ’ing! A steel cookie sheet works great.

2. Place on your 250 F preheated BBQ. (I find cooking a roast on the rotisserie shortens the cooking time so keep a close watch on the internal temperature).

3. Remove from heat when the internal temp is at 140 F and let stand for at least 20 minutes. This allows the meat to set up and finish cooking to a perfect medium rare.

TIPS:

– Invest in a meat thermometer…this makes cooking a roast a whole lot easier and removes the guess work.

– Always catch the juice, it makes the best gravy.

– The longer you let your roast marinate, the more tender it will be.

– The more expensive cuts may be more tender but if seasoned properly and long enough, the less expensive cuts can be just as tasty.

– If you buy a roast with the intension of freezing it for later, season it before freezing. Then when you thaw to cook its ready to go on the grill.

The PERFECT Steak

Steak sizzling on the grill with Dechant Spice!

Learn to cook the perfect medium rare steak

This is the way Alvis taught me to cook a perfect medium rare steak!

Ingredients

  • Ribeye steak
  • Dechant Spice seasoning
  • Cooking spray

Directions

1. Sprinkle spice on both sides of steak and rub it in.

2. Set in fridge and let marinate for as long as you want. I prefer a minimum of 2 days.

3. Take steak out of fridge and let set to room temperature (approx 20 minutes).

4. Warm grill to medium heat (approx 300 – 350 degrees).

5. Spray grill with oil.

6. Place steak on grill.

7. Let cook until you see juices starting to rise to the surface (this will vary depending on thickness of steak, outside temperature and temperature of grill.

8. Flip and let cook until you see juices rise to the surface again.

9. Remove from grill and let steaks sit for a few minutes. This lets the meat finish cooking.

Tips

– Do not flip steak over to get rid of juice. Leave juice on the steak – this adds flavour.

– My preferred cut of meat for steak is Ribeye.

BBQ Cooking Tips To Live By

#1 Cooking tip by Dave…

When having people over for a meal make sure to have plenty of booze on hand. Make the meal late. This way guests will be hungry, but happy by the time you serve. They will think anything is delicious! This works every time!

But if you are using “Dechant Spice” you can skip the booze! It will be delicious without.

#2 Cooking tip by Dave…

According to Alvis, steaks are supposed to be cooked medium rare. If somebody insists on having their steak differently, you ask them firmly but politely to leave!

Seriously…to cook the perfect medium rare steak, first season with Dechant Spice, then place on medium hot grill until juices rise, flip once and wait for juices to rise again. Take off grill and ENJOY!!
